Fajita Tacos with Goat Cheese

Tajín to taste
Sea salt to taste
1/2 onion
1/2 red pepper
1 beer
1 tbsp olive oil
Portion of Cabo Rojo Steaks fajitas
Doña Lola's Blue Corn Stencils
Refrito of Doña Lola to taste
Lucía Goat Cheese granulated to taste


Season the portion of fajitas to taste with tajine and salt. Add olive oil and a beer in a skillet or griddle on the BBQ grill and add the fajita meat. Cook the meat for 12 minutes and chop the red pepper and onion into slices. Add them when the liquid has evaporated. Heat the corn stencils on the BBQ grill. Add the meat, fried beans and the Lucía Cheese.
