With a delicate flavor, its color goes from ivory to yellow. It develops a natural cortex with a clean and sweet smell. Its texture varies as it ages, compact when it is younger and acquiring a more crumbly texture as it ages.
Its name is taken from the neighborhood in our town of Hatillo, PR where Vaca Negra was founded.
